PRODUCTION : 400 gr per m2 or 2.5 dl per m2.
SIZE Permanent cordon, old vines over 30 years old
FLOORS Shale, broken rock, shallow soils, approximately 30 cm of broken rock on bedrock
SITUATION : Vines located on the right bank of the Rhône, exclusively in the first zone, maximum altitude 560 m.
SURVEY 150 degrees average in the tank
VINIFICATION Alcoholic fermentation and maceration can last 20 to 25 days. Malolactic fermentation did not occur.
Aged in new oak barrels for 24 months
No added sugar
ANALYSES : 16.5 % alcohol by volume
Natural sugars 30g per liter. 5.0g/liter total acidity. Serving temperature 5 to 8 degrees
Tasting
COLOR : Tawny color typical of overripe red wines
NOSE Explosion of aromas: basil, elderflower, blackcurrant, lemongrass
PALACE Creaminess, richness, contrast between sweetness and tannins on the finish, length and persistence of the aromatic flavors perceived on the nose
GOURMET PAIRINGS: Blue cheeses, soft cheeses, dark chocolate desserts, fruit salads
